I will admit I am not the best cook in the world, but I am getting better. I like making dishes that are easier to cook and don’t take hours or preparation.” And what does Ajay think of her cooking, “He’s supportive as always,” she says.
Ingredients
½ kg boneless chicken breast
1 tbsp dark soy sauce
1 tbsp flour
2 tbsps cooking oil
2 tbsps green curry paste
2 chopped green onions
3 cloves of garlic, peeled and chopped
1 tsp of finely chopped fresh ginger
2 cups coconut milk
1 tbsp fish sauce
2 tbsps sugar
½ cup cilantro leaves, for garnish
Method
Cut the chicken into small cubes and then toss in one tbsp dark soy sauce. Then add the flour to coat the pieces evenly. Heat the oil in a large skillet over medium heat. Place chicken in the skillet. Cook and stir chicken until it turns brown. Then remove the chicken from the heat. Reduce heat to medium and stir in the curry paste. Cook for one minute until fragrant. Then stir in green onions, garlic, and ginger; cook for additional two minutes.
Return chicken to the skillet, and keep stirring to coat with the curry mixture. Stir the coconut milk, fish sauce, one tbsp soy sauce, and sugar into the chicken-curry mixture. Allow to simmer over medium heat for 20 minutes until the chicken is tender. Garnish with cilantro leaves.
